The Ooni Karu 16 temperature limit is up to 950°F / 500°C, according to Ooni’s Essentials Guide. The same guide says the oven is ready to start cooking Neapolitan-style pizza in about 15 minutes.
Pizza needs less heat than the maximum, so plan each cook around the stone target and the fuel table below. Every Ooni Karu 16 temperature figure here comes from Ooni’s own printed guide.
Ooni Karu 16 Temperature: Maximum Heat
The Ooni Karu 16 is designed to run at up to 950°F / 500°C, and Ooni says to switch off the flame and let the oven cool if it goes past that limit.

The printed Ooni Karu 16 temperature limit appears in the Ooni Karu 16 Essentials Guide, which says the oven has been designed to run at up to 950°F / 500°C.
Ooni also says the oven heats to that range and is ready for Neapolitan-style pizza in about 15 minutes. Elsewhere the guide adds a hard ceiling: do not let the oven exceed 999°F / 550°C, and do not leave it running on high for long periods without cooking. That is the manufacturer’s claim for readiness, so the time you see will depend on fuel, weather and how well the fire has been built.
Pizza Cooking Targets for the Karu 16
For pizza, the Ooni Karu 16 temperature target is at least 750°F / 400°C in the center of the stone before a pizza goes in, and it names about 450°C / 850°F as the sweet spot for Neapolitan-style pizza.
The stone target is read with an Ooni Infrared Thermometer aimed at the middle of the stone baking board. The Essentials Guide’s top tips say to reach at least 750°F / 400°C there, then rotate the pizza every 20 to 30 seconds for an even bake.
The guide describes a rolling flame as the sign of a Neapolitan pizza in about 60 seconds. When the fuel tray does not look like that, Ooni recommends building the flame with smaller pieces of kindling and giving new fuel time to burn before you cook.
- Fire the oven and let the fuel burn through until the flame rolls.
- Read the center of the stone with an infrared thermometer until it shows at least 750°F / 400°C.
- Launch the pizza and rotate it every 20 to 30 seconds.
Stone Temperature vs Air Temperature
The stone heats more slowly than the air, so the Ooni Karu 16 temperature on the display can run ahead of the surface you cook on.
Ooni’s guide says the stone floor warms more slowly than the air temperature shown on the digital thermometer. It asks you to use an Ooni Infrared Thermometer so the stone and air readings are close before you cook, because both matter for a good base.
The stone is not uniform. It gets hotter the closer it sits to the flame, so Ooni suggests moving food around the floor to control how each part cooks.
Heat Levels by Fuel
Ooni’s fuel table gives the Ooni Karu 16 temperature range for each fuel. Charcoal and wood reach up to 950°F / 500°C, charcoal used alone runs at 480 to 570°F / 250 to 300°C, and gas reaches 482 to 950°F / 250 to 500°C.

| Fuel | Temperature range | What Ooni says it suits |
|---|---|---|
| Charcoal and wood | Up to 950°F / 500°C | A base layer of charcoal keeps a steady heat, and wood adds a burst of heat |
| Wood | Up to 950°F / 500°C | Neapolitan-style pizza and fast-cooking food such as steak, fish and vegetables |
| Charcoal | 480 to 570°F / 250 to 300°C | Low and slow cooking, bread, meat, and thicker-crust or deeper-dish pizza |
| Gas (Gas Burner sold separately) | 482 to 950°F / 250 to 500°C | Fast cooking and very high temperatures, where the burner is available |
Ooni notes that these Ooni Karu 16 temperature figures are estimates and depend on weather and ambient temperature, so a cold or windy day can shift the result. The gas row applies only with the Gas Burner, which Ooni’s Karu 16 product page describes as sold separately and region dependent.
Fuel choice also changes the Ooni Karu 16 temperature and how the oven behaves. Ooni recommends kiln-dried hardwood such as beech or oak, starting with 3 to 6 small pieces of wood about 20 cm / 8 inches long, and refueling once the wood has mostly burned to embers. Wet wood, green wood and softwood cause excess smoke and poor performance, and treated or painted wood should never be burned.
How Airflow Controls Temperature
Fuel management, the chimney baffle and the ceiling vent are the three controls Ooni names for changing the Ooni Karu 16 temperature.
Ooni calls fuel management the easiest way to regulate temperature. It recommends topping up little and often, letting new fuel burn for a couple of minutes before you add food, and never overfilling the tray, since fuel should not spill out of the grate.
- Open chimney baffle and open ceiling vent: more draw, stronger flames and higher heat.
- Closed ceiling vent with open chimney baffle: slows the heat escape and gives a billowing smoke effect.
- Closed chimney baffle: less draw, which Ooni describes as good for low and slow cooking.
When you fire with solid fuel, Ooni asks for at least 3 feet / 1 meter of clear space around the oven and 9 feet / 3 meters above it.
If the toppings cook faster than the base, Ooni suggests closing the chimney baffle to bring the flames down, which gives the base more time to cook.
Reading the Built-in Thermometer
Checking the Ooni Karu 16 temperature on the built-in display is quick, but the digital thermometer reads the internal air temperature in °F or °C and does not measure the stone surface.
To turn it on, press the Ooni button until 888 appears. Press and hold it to switch off. A single press cycles between Celsius and Fahrenheit. The display also shows the maximum internal temperature reached, and opening the door brings the oven temperature down.
If the display shows an error, the cable is not connected to the Jack Bracket. The guide sends you to pages 8 to 10 of the manual for installation. The display switches itself off after 3.14 hours. For the stone itself, Ooni recommends its infrared thermometer. For a side-by-side look at other ovens, see how hot the Ooni Koda 16 gets.
Seasoning and First Use
Seasoning uses the top Ooni Karu 16 temperature: Ooni says to run a new oven at top temperatures for 30 minutes before the first cook, then let it cool completely and wipe it down.
The burn removes oils or coatings left from manufacturing. Once the oven is cool, wipe it with dry paper towels. The legs must be fully extended before you light the oven.
Do not use water to clean the oven while it is hot, and store it only when it is completely dry. After you finish cooking, Ooni says to wait at least two hours before moving or cleaning it. Routine cleaning is covered in how to clean an Ooni pizza oven.
Frequently Asked Questions
What is the maximum temperature of the Ooni Karu 16?
The maximum Ooni Karu 16 temperature is 950°F / 500°C by design, and its built-in digital thermometer keeps the maximum internal temperature reached on the display. If the oven goes past the limit, Ooni says to switch off the flame and let it cool before you continue.
How long does the Karu 16 take to heat up?
Ooni says the oven is ready for Neapolitan-style pizza in about 15 minutes. That is the manufacturer’s claim, and the real time depends on the fuel, the weather and how the fire is built.
What temperature should I aim for when baking pizza?
The Ooni Karu 16 temperature Ooni recommends is at least 750°F / 400°C in the center of the stone, and about 450°C / 850°F for Neapolitan-style pizza. Check both with an infrared thermometer. Ooni’s top tips also suggest rotating the pizza every 20 to 30 seconds once it is inside, and reading the stone center rather than the air display, because the stone heats more slowly.
Can I use gas with the Karu 16?
Gas needs the Gas Burner, which Ooni sells separately, and availability depends on your region. The gas Ooni Karu 16 temperature range in Ooni’s table is 482 to 950°F / 250 to 500°C, and you should follow the manual for gas use.
Does the built-in thermometer read the stone temperature?
No. The digital thermometer shows the internal air temperature, so Ooni recommends an infrared thermometer to read the stone.
Should I clean the oven with water after cooking?
No. Ooni says not to use water to clean or cool the oven while it is hot, and to store it only when it is completely dry.
Use Ooni’s printed figures as the reference for every Ooni Karu 16 temperature decision, and check the stone with an infrared thermometer before you launch a pizza. This guide covers heat only, so check the Ooni Karu 16 dimensions before you place the oven. For general ranges across oven types, see pizza oven temperature.
