Polselli 00 Flour Review: Which Bag Fits Your Pizza Dough?
Polselli 00 flour is a line of finely milled Italian soft wheat flours from Molino Polselli, a family mill in Arce, Italy. Classica, the W 270 bag, is a dependable, forgiving choice for Neapolitan-style pizza on medium-length ferments. The catch is that Polselli sells several 00 flours built for very different dough schedules, and grabbing the wrong one is the fastest way to be disappointed by a good flour.

ToggleThe Short Verdict on Polselli 00 Flour
Classica is worth buying if you make Neapolitan-style pizza at home and want dough that stretches easily without much troubleshooting. Polselli’s own product page lists Classica at W 270, sold in 1 kg, 5 kg and 25 kg bags, and recommends it for direct doughs with medium rise times and traditional Neapolitan pizza.
The credibility check holds up. Polselli is listed as a supplier by the Associazione Verace Pizza Napoletana (AVPN), and the Italian daily Il Roma reported in July 2025 that the AVPN had approved a Polselli flour for both oven-baked and fried Neapolitan pizza, while the Associazione Pizza Romana approved its lines for Roman round, pala and teglia pizza.
Use this quick fit check before you order:
- Pick Classica if your dough rests somewhere between about 8 hours and an overnight proof, and you mostly bake Neapolitan or soft thin-crust pizza.
- Look at Vivace or Super if you cold-ferment for a day or longer, push hydration high, or bake a lot of bread.
- Look at the Organic bag if you mostly make same-day dough and want a USDA Organic label.
What “00” Means on a Polselli Bag
“00” is an Italian milling grade that describes how finely the flour is ground, not how strong it is. The label says nothing about wheat type, protein content or W index, which are the numbers that actually decide how a pizza dough behaves.
That’s where many buyers go wrong. Every Polselli bag in this review says 00, yet Wholesale Italian Food’s listings put the Organic bag at W 220 and Super at W 360. A higher W means a stronger, more elastic gluten network; the same reviewer puts a typical pastry flour around W 180 and treats anything over 300 as about as strong as flour gets.
So the useful question isn’t whether a bag says 00. It’s how long your dough rests and how hot your oven runs.
Classica vs Vivace vs Super vs Organic
Classica covers medium ferments, Vivace and Super are built for longer and colder schedules, and Organic is the same-day option. The Classica strength below comes from Polselli’s own page; the other specs and all prices come from Wholesale Italian Food’s listings, checked on September 17, 2026.
| Flour | Listed W | Listed protein | Suggested rise | Where it shines | 5 kg price |
|---|---|---|---|---|---|
| Classica | W 270 | 12% | 8 to 10 hours | Neapolitan pizza, focaccia, calzones | $29.90 |
| Vivace | W 290 | 13% | 16 to 18 hours | Cold-fermented pizza, biga, ciabatta | $29.90 |
| Super | W 360 | 15.5% | 24 to 26 hours | Long ferments, sourdough, artisan bread | $29.90 |
| Organic | W 220 | 11.5% | 5 to 6 hours, direct | Same-day pizza, pastry, soft rolls | $29.90 |

Treat the Vivace and Super numbers as a starting point, not gospel. Polselli describes Vivace as a long-rise flour suited to both round and pan pizza, but an Italian retailer lists it at W 330 with 13.5% protein and a 24 to 48 hour fridge rise, and Super’s Amazon listing cites W 300+ and a rise of 72 hours or more. Read the spec panel on the bag you actually receive before you build a long cold ferment around a number.
The trade-off is straightforward. Since all four 5 kg bags cost the same, the only question is fermentation tolerance: a stronger flour gives you more time and more room for wet doughs, but if you plan only a few hours ahead, you’re buying tolerance you won’t use.
How Classica Behaves in Real Dough
Classica makes a soft, extensible dough that’s easy to stretch by hand, but like most Italian pizza flours it has a firm limit on fermentation time.
The fermentation window
Wholesale Italian Food suggests an 8 to 10 hour schedule for Classica. Todd Mitchell of Satisfying Slice, who has made about a dozen Neapolitan pizzas with it using the AVPN recipe, rests his dough up to 24 hours at room temperature and found that going past that point, or using too much yeast, overproofs the dough and makes it hard to work. Inside that window, he found it robust, forgiving to stretch and especially pleasant to knead by hand.
In practice, Classica rewards a planned schedule. If your kitchen runs warm or your dough regularly sits longer than a day, cut the yeast or move up to Vivace.

Heat and texture
At a traditional 900°F bake, Mitchell got an airy, lightly charred, slightly chewy crust with the typically floppy Neapolitan slice, and notes that baking closer to 800°F lets you skip the knife and fork. For a conventional oven, his advice is to use the highest temperature it reaches and bake on a pizza stone or steel if you have one.
For a second opinion on the range, The Dough Academy tested Polselli Vivace in its seven-brand 00 roundup and reported a light, airy pizza crust with a good rise, plus bread with a soft crumb that was less chewy than loaves made with higher-protein flours.
Price Per Kilo and the Smartest Bag Size
One 5 kg bag is cheaper per kilo than a single 2.2 lb bag, but ten of the smaller bags come out cheaper still. These are Wholesale Italian Food prices, checked on September 17, 2026.
| How you buy Classica | Price | Cost per kg |
|---|---|---|
| One 2.2 lb (1 kg) bag | $6.40 | $6.40 |
| One 11 lb (5 kg) bag | $29.90 | $5.98 |
| Ten 2.2 lb bags at the 10+ tier | $57.60 | $5.76 |
Deeper tiers start at 60 units ($5.50 each) and 200 units ($5.12 each), which is pizzeria and reseller territory rather than home kitchen territory. Smaller bags also mean you open one kilo at a time instead of an 11 lb sack, and Satisfying Slice flagged that big format as the main barrier to trying Polselli’s stronger flours at home.
A few things to check before you order:
- Free shipping is applied automatically on orders of $99 or more, so ten 1 kg bags at $57.60 won’t qualify on their own.
- When we checked, the 2.2 lb Classica listing was showing as sold out, so availability can rotate.
- The store’s reseller calculator lists a $9.99 suggested retail price for the 1 kg bag, a handy benchmark when you compare grocery prices.
- Look at the Wholesale Italian Food page on Couponaro for a currently verified code, then confirm at checkout whether it applies on top of volume pricing.

Quick Answers Before You Order
Is Polselli Classica unbleached and unbromated?
Yes. Wholesale Italian Food lists Classica as both unbleached and unbromated, and its 5 kg listing gives the ingredients as 00 soft wheat flour with no added enzymes or additives, noting that it’s processed in a facility that uses soy.
How does Classica compare with Caputo Pizzeria flour?
They sit in the same strength range. Satisfying Slice puts Classica at roughly W 260 to 280 and notes that Caputo’s blue Pizzeria bag, which many treat as the default Neapolitan flour, lands in that same range. If you already like Caputo Pizzeria, Classica is a like-for-like alternative rather than a different style of flour.
Can Polselli 00 flour work for fresh pasta?
It can, but Polselli also makes a flour for exactly that job. Wholesale Italian Food sells Polselli’s Fresh Pasta Flour, Tipo 00, in a 5 kg bag for $28.50. One reviewer of the Organic 00 bag on the same site said it made excellent pasta and baguettes.
When Polselli Classica Isn’t the Right Bag
Classica is the wrong pick when your schedule, texture goals or sourcing rules point somewhere else.
- Long cold ferments of 24 hours or more: Vivace and Super are the Polselli bags listed for 16 to 18 hour and 24 to 26 hour schedules.
- A sturdy, foldable slice from a very hot oven: Classica’s Neapolitan softness can read as floppy at 900°F, so bake a little cooler or choose a stronger flour.
- A strict Italian-grain requirement: Polselli describes Classica as a blend of Italian and imported soft wheat, while the Organic bag is the one marketed around Italian wheat.
- Same-day dough only: the Organic bag’s listed 5 to 6 hour direct schedule is a closer match to how you bake.
If you’re still on the fence, the lowest-risk move is a single 2.2 lb bag of Classica run through the dough schedule you already use. If it overproofs before you’re ready to bake, step up to Vivace; if you only ever bake same-day, switch to the Organic bag. Check the Wholesale Italian Food page on Couponaro for a verified code first, and plan any bigger order around the $99 free-shipping line so you’re not paying freight on flour.

Elliot Long spent seven years buying paid search and social traffic for e-commerce brands before starting Couponaro. That work taught him how much of the coupon web runs on codes that expired years ago. He runs this site on his own, dates every page he updates, and would rather tell you a brand has no working code than waste your time at checkout.
