Breville Pizzaiolo Manual: Setup, Controls, Safety and Cleaning
10 min read · by Arjun Mehta · Last updated: November 6, 2026
The Breville Pizzaiolo manual is the BPZ820 instruction book, and it explains setup, electrical safety, the seven PIZZA STYLE settings, Manual Mode, cleaning and troubleshooting for the Smart Oven Pizzaiolo. Read the setup and electrical sections first, because the oven reaches 400°C and needs open space around it.
This guide summarizes the Breville Pizzaiolo manual’s household instructions in the order the book gives them. Follow the instruction book and your local electrical code, and ask a licensed electrician if you are unsure about your outlet.

Setup, Clearance and Electrical Safety
The Breville Pizzaiolo manual asks for at least 10 cm of space on both sides and 15 cm above, on a flat, stable and heat-resistant surface. Keep it away from curtains, cloth-covered tables and burners.
Register the oven once it is set up. Breville’s US product page says the full experience is free after you register your oven.
Placement rules from the Breville Pizzaiolo manual:
- Use a dry, level surface with the cord kept off the counter edge and away from hot surfaces.
- Do not put cardboard, plastic, paper or metal foil in the oven, and do not cover any part of it with foil.
Electrical rules from the Breville Pizzaiolo manual for the outlet and cord:
- Plug it into a grounded three-hole outlet. Never cut off the ground prong or use an adapter.
- The Breville Pizzaiolo manual recommends a dedicated circuit that does not feed other appliances.
- It advises a residual current device (safety switch) rated at 30 mA or less on the supply circuit.
- An extension cord must be rated at least as high as the oven, have a three-prong grounding plug, and not hang over the counter.
- Stop using the oven if the cord or plug is damaged, and call Breville Consumer Support.
Controls, Components and First-Use Burn-In
The oven has three dials, two indicator lights and a stone deck, and the Breville Pizzaiolo manual says to run it empty for 20 minutes before the first pizza. The table below lists what each control does in the Breville Pizzaiolo manual.

| Part | What the manual says |
|---|---|
| TIME dial | Shows the recommended time for the chosen style. Press it to start the countdown, and turn it to zero to stop. |
| STYLE dial | Selects one of the PIZZA STYLE settings. |
| DARKNESS dial | Adjusts top darkness and temperature. The center is the default, and turning it clockwise raises the temperature. |
| AT TEMPERATURE light | Flashes while preheating or when the oven is outside the cooking range. It stays solid when the oven is ready. |
| MANUAL MODE light | Shows that Manual Mode is active. |
| Stone deck | Must stay in place whenever the oven is on. The active deck moves forward and down when you open the door. |
First-Use Burn-In
The burn-in removes protective substances from the heating elements. The Breville Pizzaiolo manual says the vapors are safe, but the room should be well ventilated.
- Remove all packing material, promotional labels and tape.
- Wipe the stone deck with a damp cloth, dry it thoroughly and place it in the cavity.
- Wipe the interior with a soft, damp sponge.
- Plug the oven into a grounded outlet, and wait for the alert and the TIME dial lights to turn off.
- Turn the STYLE dial to 400°C and let the oven run for 20 minutes.
Season the pan before its first use, using the steps in the Care and Cleaning section.
Operating Steps and Preheating
The Breville Pizzaiolo manual’s order is to set the STYLE dial, wait for the AT TEMPERATURE light to stay solid, load the pizza and then press TIME to start. Preheating takes 10 to 20 minutes depending on the preset, and our pizza oven temperature guide shows how other home ovens compare.
- Insert the stone deck into the cavity.
- Turn the STYLE dial to the setting you want.
- Check the recommended time on the TIME dial, and adjust it if needed.
- Wait while the AT TEMPERATURE light flashes, until it stays solid.
- Slide the pizza onto the stone deck with the peel. Do not use the peel for pan pizza.
- Close the door. If you use the pan, remove its handle first.
- Press the TIME dial to start, and remove the pizza when the alert sounds.
Do not load a pizza while the AT TEMPERATURE light is flashing, and wait for it to turn solid again before each pizza. At the high settings, food can overcook and ignite quickly, so stay near the oven.
The Seven PIZZA STYLE Presets
The STYLE dial in the Breville Pizzaiolo manual offers seven settings, from 400°C and WOOD FIRED to PAN, FROZEN and 160°C, and each one sets its own heat profile. Choose the setting that matches your dough and toppings, such as a thin-crust pizza dough recipe for THIN & CRISPY or a Neapolitan pizza recipe for WOOD FIRED, then adjust darkness with the DARKNESS dial.
| Setting | What the manual says |
|---|---|
| 400°C | Extremely intense heat, suited to charred vegetables |
| WOOD FIRED | Neapolitan results with a cooked but malleable crust, blisters and leopard spotting. The Breville Pizzaiolo manual notes that the oven uses no wood. |
| THIN & CRISPY | Thin dough for a crisp result, with toppings taken to the edge |
| THICK CRUST | Designed for a less-hydrated, larger dough ball that forms a fluffy base |
| PAN | Crunchy base and fluffy dough with plenty of toppings. Requires the pan supplied with the oven. |
| FROZEN | Made for frozen pizza |
| 160°C | Low-temperature function for a flatbread or wrap snack, cooked for 8 to 10 minutes |
Manual Mode for Deck and Top Heat
Manual Mode lets you set deck and top heat separately. You enter it by holding the TIME/DECK TEMP dial while you turn the STYLE/TOP TEMP dial from OFF to 160°C.
- Press and hold the TIME/DECK TEMP dial.
- Turn the STYLE/TOP TEMP dial from OFF to 160°C.
- Release the TIME/DECK TEMP dial.
- Wait for the Manual Mode light to flash three times and then stay on.
In Manual Mode, the far-right control sets how the top heat is split. Turn it fully left for an even top, which suits pizza where the topping and crust must cook together. Turn it right to send more heat to the outer top element, which the book recommends for Neapolitan pizza that needs leopard spotting.
The Breville Pizzaiolo manual gives a time and temperature range for each style. For example, Neapolitan (Wood Fired) uses 2 minutes with the deck and top both at 370 to 400°C. The Breville Pizzaiolo manual’s Manual Mode table lists the other styles.
To return to a preset, turn the STYLE dial to OFF, then turn it back on and select the setting you want.
Cleaning, Care and Storage
The Breville Pizzaiolo manual says to unplug the oven and let it cool completely before cleaning, and never to immerse the body, cord or plug in water.

- Body: wipe with a soft, damp sponge. If you use a cleanser, apply it to the sponge, not the oven.
- Glass door: use glass cleaner or mild detergent on a soft cloth or soft plastic pad.
- Baked-on residue: use detergent and water, or an oven cleaner sold for ovens, after testing a small spot first.
- Stone deck: wipe it with a soft, damp sponge after each use. It cannot be soaked or put in the dishwasher.
- Pizza pan: wash by hand with warm water and mild soap, dry it fully and never put it in the dishwasher.
- Pizza peel: wash in warm soapy water, or place it in the dishwasher.
If rust appears on the pan, scrub it with a stainless steel or copper pad and hot water, then season it again. Avoid metal scouring pads and steam cleaners, because loose pieces can touch electrical parts.
For storage, keep the oven cool, clean and dry, with the stone deck inserted and the door closed. Place nothing on top except the peel.
Troubleshooting Warnings from the Breville Pizzaiolo Manual
Steam, pulsing elements, fan noise and smoke are normal, but a fire that does not go out within 20 seconds means you should unplug the oven.
| Symptom | What the manual says to do |
|---|---|
| Oven will not switch on | Check the plug, try an independent outlet, and reset the circuit breaker if needed. |
| AT TEMPERATURE light flashes | The oven is outside the cooking range. Wait until the light stays solid before loading the pizza. |
| Steam from the door | Normal, because the door vents steam from wet food. Wipe any moisture from the counter around the base. |
| Some heating elements seem off | Normal. Element IQ pulses power in short bursts to control the temperature. |
| Fans run after switching off | Normal. The fans cool the electronics and turn off by themselves. |
| Smoke during cooking | Normal at high heat. Use less flour and semolina on the peel. |
| Fire in the oven | Do not panic. Close the door. If the fire does not go out within 20 seconds, unplug the unit and keep the door closed until the fire is out. |
