Conchiglie pasta is a dried Italian pasta shaped like a seashell, built to hold sauce. It has a ridged outside and a smooth inside, and it cooks in about 10 to 11 minutes. The shape comes in three sizes, from small soup shells to jumbo shells for stuffing. The size you pick depends on your sauce and on whether you plan to bake.
What Is Conchiglie Pasta?
Conchiglie pasta is a dried Italian pasta named after the Italian word for sea shell. It is usually made from durum wheat semolina and water, which helps it hold its shape during cooking.
The pasta has an opening on one side that looks like the opening of a shell. Most conchiglie pasta is sold in plain durum wheat. Colored versions use tomato, squid ink or spinach. According to The Pasta Project, whole wheat versions also exist, so a conchiglie pasta box may list the grain on its front label.
The shape likely dates back to the 18th and 19th centuries in southern Italy, where it is traced to the Puglia region.
According to Wikipedia, the Italian word conchiglia comes from the Greek kochyli.
Why the Shell Shape Holds Sauce
The ridged outside and hollow inside of conchiglie let sauce cling to the surface and fill each shell. That is the main reason the shape works for so many sauces. DeLallo notes that the shape and ridges are formed by special machine dies as semolina dough is pushed through. That process is why each shell keeps a consistent opening and a ridged outer surface from piece to piece, which is what you rely on when you pour thick sauce over it.
- Ridges on the outside give thick sauce something to grip.
- The hollow interior fills up as the pasta is stirred into the sauce.
The ridged exterior is the feature that makes conchiglie pasta a good match for heavier sauces. The hollow shape keeps some of that sauce inside each piece, so every bite carries pasta and sauce together even when you use a modest amount of sauce.
The same hollow can trap water after boiling. Drain the shells in a colander and give it a good shake before you add the sauce, otherwise the trapped water can thin a sauce that was meant to be thick.
Conchiglie Sizes Compared
Conchiglie comes in three sizes: conchigliette for soups, conchiglie for thick sauces and baking, and conchiglioni for stuffing. The sizes of conchiglie pasta are not interchangeable in every recipe, so match the size to the dish before you shop.
According to The Pasta Project’s guide to conchiglie, the three sizes break down like this.
| Size | Best use |
|---|---|
| Conchigliette (smallest) | Soups, pesto and pasta salads |
| Conchiglie (medium) | Thick sauces and baked dishes |
| Conchiglioni (jumbo) | Stuffed with cheese or meat, topped with sauce, then baked |
Conchigliette are the smallest size and are traditionally used in soups. Conchiglioni are similar in size to lumaconi, the snail shell pasta also sold as lumache pasta. Their size suits stuffing, while the medium shape suits thick sauces and bakes. DeLallo calls the medium shells a bit small for stuffing. For a cold pasta salad, the medium size is the usual pick, since the pieces are big enough to hold dressing and small enough to eat with a fork.
How Long to Cook Conchiglie
Conchiglie cooks in about 10 to 11 minutes, until al dente, in a large pot of boiling water. Cooking times can vary by brand, so the package is the final check for any conchiglie pasta you buy.
The brand DeLallo gives the same range in its guide to conchiglie. Use these steps to get a tender bite without overcooking, and salt the water before the pasta goes in so the shells take on seasoning as they cook.
- Bring a large pot of water to a rolling boil.
- Add the conchiglie and stir so the shells do not stick together.
- Start tasting near the 10-minute mark.
- Scoop out a small cup of the cooking water, then drain once the pasta is al dente and shake the colander well.
- Toss the shells straight into the sauce, adding a splash of the cooking water if the sauce is too tight.
If you plan to bake conchiglie pasta later, cook it a little short of the final texture so it does not turn soft in the oven.
Stuffing and Baking Conchiglioni
Conchiglioni are the jumbo size, and they need a different cooking routine from the medium shape. Boil them only until very firm, because they finish cooking in the oven.
DeLallo says conchiglioni are traditionally stuffed with fillings like cheeses and meats, topped with sauce and baked. The Pasta Project adds that hard durum wheat holds up well during cooking, which matters most for the jumbo size because it is boiled and then baked.
For a baked dish, DeLallo says shells tend to be paired with marinara, sometimes with heartier additions such as sausage or ground beef. A simple homemade marinara sauce works well here. The sources give no exact pre-boil time for the jumbo size, so follow the package or your recipe and stop while the shells are still firm. Spread a thin layer of sauce on the bottom of the dish before you set the shells in, so they do not dry out while they finish cooking in the oven.
Best Sauce for Conchiglie
Thick sauces suit conchiglie pasta best, including cheese sauce, chunky tomato sauce and bolognese. The ridges and the hollow center are the features that these sauces rely on, so the sauce stays in the pasta instead of sliding off.
- Cheese sauces, which cling to the ridges.
- Chunky tomato sauces, which fill the shells.
- Bolognese and other thick meat sauces.
- Pesto, for cold pasta salads.
- Creamy or oil-based sauces, which DeLallo also pairs with pasta salads.
DeLallo lists conchiglie for pasta salads, sauced hot pasta dishes and baked dishes. The Pasta Project also lists meat, fish and vegetable sauces as common pairings.
For cold dishes, DeLallo says oil-based, creamy and herbaceous sauces such as pesto are popular with pasta salads, so a conchiglie salad pairs well with a dressing that clings to the ridges. Conchigliette are the exception to the thick-sauce rule, since they are often used in soups. A light broth suits the smallest size best.
If you cannot find conchiglie, pick another shape that scoops or grips. Cavatelli pasta has a similar rolled-shell form, and orecchiette also cups chunky sauce. Whichever you choose, keep the sauce thick enough to cling, and avoid thin, watery sauces that the shells cannot hold.
Conchiglie Pasta in the US
In the US, conchiglie is often sold simply as “shells,” so the Italian name may not appear on the package. The Italian word is pronounced con-keel-yay, and the US label covers the same shape, as explained on the shells pasta page.
Because the label may only say shells, check the package picture or description before buying. That way you know whether you are getting the medium size for sauce or the jumbo size for baking. If the package names a size, conchigliette points to soups, conchiglie to thick sauces and bakes, and conchiglioni to stuffing, so the name tells you the plan for the box.
Frequently Asked Questions
Are conchiglie the same as pasta shells?
Yes. In the US, conchiglie is often labeled simply “shells.” If you need a specific size, check the package for conchigliette, conchiglie or conchiglioni, since the label may not name the size.
What is conchigliette?
Conchigliette are the smallest of the three conchiglie sizes. They are traditionally used in soups, and The Pasta Project also lists them in pesto dishes and salads.
Can you bake conchiglie pasta?
Yes. Conchiglie pasta suits baked dishes, and conchiglioni are the usual choice for stuffing with cheese or meat before topping with sauce and baking. The Pasta Project recommends hard durum wheat, which holds up well during cooking.
How long do you cook conchiglie?
Conchiglie takes about 10 to 11 minutes to reach al dente, according to DeLallo. Start tasting near the 10-minute mark, and check the package for the brand’s exact time before draining.
Does conchiglie pasta have ridges?
Yes, the outside of conchiglie pasta is ridged and the inside is smooth, according to The Pasta Project. The ridges help sauce cling, and the hollow interior fills as the pasta is stirred into the sauce, which suits thick sauces.
Are colored conchiglie pasta different?
Colored versions use tomato, squid ink or spinach. The shape and the cooking method stay the same, so colored conchiglie pasta works in any recipe that calls for plain conchiglie.
If you like cup-shaped pasta that cradles sauce, orecchiette pasta is a good next shape to try. Pick the conchiglie pasta size by the sauce and by whether you plan to bake. Small conchigliette suit soups, medium conchiglie suit thick sauces, and conchiglioni suit stuffing. Check the package for the cooking time, and taste near the 10-minute mark before you drain the pasta.
