Gozney Arc XL Manual: How to Set Up, Light and Cure Your Oven
9 min read · by Arjun Mehta · Last updated: November 6, 2026
The Gozney Arc XL manual sets out a fixed order: safety checks, gas connection, a leak test, the igniter battery, lighting, and then a 30-minute first firing to cure the oven. Follow those steps in sequence before you cook anything.
The figures on this page come from the manufacturer manual itself. Where the Gozney Arc XL manual is general or silent on a point, this page says so rather than guessing.
This page summarizes the Gozney Arc XL manual and does not replace it. Gas rules differ by region, so follow the manual and your local regulations for installation and use.
What the Gozney Arc XL Manual Says About Safe Use
The Arc XL is for outdoor use only, must stay at least 1.5 m from any structure, combustible material or other gas cylinder, and should never be left unattended. If you need an oven for indoor use, the Ooni Volt 2 manual covers an electric model made for indoor use.
According to Gozney’s Arc and Arc XL manual, the oven must never be used in enclosed areas, because failing to follow that rule could result in fire or explosion. The Gozney Arc XL manual also lists these rules for every session:
- Keep flammable liquids at least 7.5 m away from the oven.
- Do not operate the oven in strong winds, since wind can put out the flame. Use a wind break kept more than 45 cm from the device.
- Do not touch the oven until heated liquids have cooled to 45 °C or less, and expect the oven to stay hot for a few hours after use.
- Never use gas and wood at the same time.
- Keep children away during and after operation.
- Use heat-resistant gloves and do not wear loose flammable clothing or sleeves near the oven.
The Gozney Arc XL manual also warns against pouring water on the cooking stone, which can crack it.
Connecting the Gas Cylinder, Hose and Regulator
The Gozney Arc XL manual recommends a gas cylinder of at least 9 kg, and every gas connection must be leak tested before the first use. Check that the gas type matches the data plate before you connect anything.
Use a cylinder that is not rusty, dented or damaged at the valve. The regulator must comply with EN 16129 or EN 12864 and sit between the cylinder and the oven. Never fill a cylinder beyond 80 percent full, and never store a spare cylinder under or near the oven.
- Confirm that the cylinder valve and the regulator are closed, then remove the cap from the gas inlet and check it for damage or debris.
- Pull back the collar on the quick-connect hose, place the hose onto the gas inlet, and release the collar so it returns freely.
- For a push-fit regulator, keep the lever horizontal, press the button, place the regulator on the cylinder, then turn the lever vertical. For a screw-fit regulator, align the threads and tighten until the fit is snug, taking care not to cross them.
- Brush soapy water over each connection and the hose. Bubbles mean a leak.
- If a leak persists at the hose connection, reattach the fitting and test again. If it persists, turn off the gas and do not operate the oven.
Inspect the hose before every use and keep it away from heated surfaces and direct sunlight. The Gozney Arc XL manual sets a maximum hose length of 1.5 m, and in Finland the limit is 1.2 m. Replacement hoses and regulators must be the type Gozney specifies. Never use a naked flame to check for gas leaks.
The Gozney Arc XL manual is not fully consistent on cylinder size. The connection section recommends 9 kg as a minimum, while the troubleshooting section recommends at least 5 kg. Check the current manual before you buy a cylinder, and read the Arc XL natural gas answer for the gas types it lists.
Installing the Igniter Battery and Lighting the Burner
Install one AAA battery in the ignition module before the first use, remove the stone retention wedges, then press the control knob in and turn it to the 9 o’clock position until the burner clicks and lights.

To fit the battery, remove the thermometer from the front of the oven, where the ignition module sits inside and to the left. Unscrew its cap, place the battery negative end first, and return the thermometer to the dock.
- Remove the stone retention wedges from the oven.
- Press the control knob in and turn it to the 9 o’clock position until you hear a clicking sound and the burner ignites.
- Turn the knob anticlockwise to the 7 o’clock position and hold it there for up to 30 seconds so the flame failure device disengages.
- Push the knob firmly inwards, then release it.
A correct flame is yellow and rolls along the top of the oven.
First Firing and Curing the Oven
On the first firing, the Gozney Arc XL manual recommends a medium to low flame for about 30 minutes to cure the oven before you raise it to high heat.

After the cure, later firings can be brought up to your target temperature straight from ignition. If the oven has been dormant for an extended period, cure it again as if it were a first firing.
Before each session, check the oven, burner and venturi for blockages such as food residue or insect nests, and see cleaning a pizza stone safely for stone care.
Recommended Temperature Ranges by Pizza Style
The Gozney Arc XL manual lists 430 to 480 °C for Neapolitan pizza and 370 to 430 °C for Roman style pizza, while anything at 480 °C and above is labelled too hot. The Fahrenheit values below are conversions of the manual figures. Gozney’s US and Canada manual prints rounded Fahrenheit ranges instead: 800 to 900 °F for Neapolitan, 700 to 800 °F for Roman and 600 to 700 °F for New York style.
| Style | Manual range (°C) | Converted range (°F) |
|---|---|---|
| Neapolitan pizza | 430 to 480 | 806 to 896 |
| Roman style pizza | 370 to 430 | 698 to 806 |
| New York style pizza | 320 to 370 | 608 to 698 |
| Over temperature (too hot) | 480 and above | 896 and above |
For a wider view of heat levels, read the pizza oven temperature guide. The digital temperature display reads a probe inside the oven. Error E1 means the jack plug is loose or the probe is damaged, so check that the plug is fully pushed in at the back of the display. Error E3 means the probe has passed 700 °C. The Gozney Arc XL manual says to turn the burner off and let the oven cool naturally, because rapid cooling can crack the stone floor.
Troubleshooting Ignition and Burner Problems
If the burner will not ignite, the Gozney Arc XL manual suggests holding the knob in for up to 30 seconds, then checking the igniter battery and the gas canister.
| Problem | What the manual suggests |
|---|---|
| Flame looks too small | Replace an empty canister and use one of at least 5 kg. Clean the burner if it is blocked. Below 0 °C, some loss of power is expected. |
| Failure to ignite | On a first firing or a new bottle, keep the knob in for 30 seconds until the flame failure device disengages. If there is no click, replace the battery in the dock. |
| Noisy flame | Turn the burner to low, then back to high. If the sound continues, turn it off for 5 minutes, retry, and review the cleaning instructions. |
Shutting Down the Oven Safely
Turn off the gas at the cylinder first, then turn the oven off, and wait three minutes before you remove the regulator. This lets any gas left in the burner or pipe be used up safely.
- Turn off the gas at the cylinder valve.
- Wait three minutes.
- Remove the regulator, then turn the control dial back to the off position.
If the flame goes out during cooking, turn off the control knob and the cylinder valve, then wait five minutes before relighting. Because some foods produce flammable fats and juices, the Gozney Arc XL manual says the oven should be attended at all times while in use.
For a grease or fat fire, turn off the burner knob and the cylinder valve until the fire is out, and remove the food. Never use water on an oil or grease fire. If a fire occurs, keep away from the oven and call your fire department.
Frequently Asked Questions
Does the Gozney Arc XL need a leak test before first use?
Yes. The Gozney Arc XL manual requires a leak test before the first use, and again after any cylinder refill or after the hose or regulator has been disconnected. Brush soapy water on each connection and look for bubbles. Never check for leaks with a flame, and never light the burner while leak checking.
How long should I cure a new Gozney Arc XL?
The Gozney Arc XL manual recommends a medium to low flame for 30 minutes on the first firing, then a move to high heat. Later firings can be brought up to temperature directly from ignition, and a long break means curing again.
What battery does the igniter use?
The Gozney Arc XL manual calls for one AAA battery in the ignition module, which sits inside the front of the oven behind the thermometer cap. Insert it negative end first, then return the thermometer to the dock. If the knob makes no clicking sound, replace this battery before doing anything else.
What gas cylinder size does the manual recommend?
The connection section recommends a 9 kg cylinder, about 20 lb, as a minimum. The troubleshooting section recommends at least 5 kg. Because the two figures differ, check the current manual and your regulator details before you buy a cylinder.
Can I use the Gozney Arc XL indoors or in a garage?
No. The Gozney Arc XL manual says to use the oven outdoors only and never in enclosed areas. It also says gas cylinders must not be stored in enclosed areas and should be kept upright outdoors, at least 1.5 m from any structure.
Keep the Gozney Arc XL manual near the oven, since its safety warnings apply to every firing. If anything here differs from the manual, the manual wins. Before you pick a spot, check the Arc XL size and weight guide and browse the oven model guides.
